Za'atar Turkey Schnitzel
Ingredients:

4 turkey breasts, pounded to an even thickness
1/2 cup all-purpose flour
2 large eggs, beaten
1 cup panko breadcrumbs
3 tablespoons za'atar spice blend
Salt and pepper, to taste
Olive oil, for frying
Instructions:

Prepare the breading stations:

In one shallow dish, place the flour and season with salt and pepper.
In another dish, beat the eggs.
In a third dish, combine the panko breadcrumbs with the za'atar spice blend.
Bread the turkey:

Dredge each turkey breast in the seasoned flour, making sure it's fully coated.
Dip it into the beaten eggs, then coat with the panko mixture, pressing lightly to adhere the breadcrumbs.
Cook the schnitzels:

Heat a few tablespoons of olive oil in a large skillet over medium-high heat.
Fry the turkey schnitzels for about 3-4 minutes on each side, until golden brown and cooked through (internal temperature should reach 165°F/74°C).
Remove from the skillet and drain on paper towels.
Serve:

Serve the schnitzels hot, garnished with a squeeze of lemon if desired. Enjoy with a side of salad, roasted vegetables, or couscous.
