Slow Cooker Queso Chicken Tacos
Ingredients:
2 lbs boneless skinless chicken breasts
1 can (10 oz) diced tomatoes with green chilies (Rotel)
1 package taco seasoning
1/2 cup chicken broth
1 block (8 oz) cream cheese
1 cup shredded cheddar cheese
Soft taco shells
Optional toppings: sour cream, cilantro, salsa, avocado, lime wedges
Instructions:
Place the chicken breasts in the slow cooker. Sprinkle the taco seasoning over the chicken.
Pour the diced tomatoes (with juices) and chicken broth over the chicken.
Cook on low for 6-7 hours or on high for 3-4 hours until the chicken is tender and easily shreds.
About 30 minutes before serving, add the block of cream cheese to the slow cooker. Stir occasionally until the cream cheese is fully melted and incorporated.
Once the chicken is cooked, shred it with two forks.
Stir in the shredded cheddar cheese and let it melt into the chicken mixture.
Serve the queso chicken in soft taco shells with your favorite toppings.
