Creamy Spinach Tortellini with Blackened Shrimp 🦐🧄
Creamy, cheesy pasta meets spicy, seared shrimp—pure indulgence!
📝 Ingredients:
1 lb shrimp, peeled & deveined
9 oz cheese tortellini (fresh or refrigerated)
1 tbsp olive oil
2 tsp Cajun or blackened seasoning
2 cups fresh spinach, chopped
1 tbsp butter
3 cloves garlic, minced
1 cup heavy cream
½ cup grated Parmesan cheese
Salt & black pepper, to taste
🍽️ Directions:
1️⃣ Cook the Tortellini:
Boil tortellini according to package directions. Drain and set aside.
2️⃣ Blacken the Shrimp:
Toss shrimp in Cajun or blackened seasoning. Heat olive oil in a skillet over medium-high and sear shrimp 2–3 minutes per side until golden. Remove and set aside.
3️⃣ Make the Cream Sauce:
In the same skillet, melt butter. Sauté garlic for 1 minute, then add cream and bring to a gentle simmer.
4️⃣ Add Spinach & Cheese:
Stir in spinach and cook until wilted. Add Parmesan, stir until smooth, then season with salt and pepper.
5️⃣ Toss Pasta & Finish:
Add cooked tortellini and toss to coat in the sauce. Top with blackened shrimp and serve hot.
