Creamy Chicken with Mushrooms on Mashed Potatoes & Spinach 🍄
Ingredients:
For the chicken and sauce:
1 ½ lbs boneless, skinless chicken breasts
Salt and black pepper to taste
2 tbsp olive oil
1 tbsp butter
8 oz mushrooms, sliced (white or cremini)
2 cloves garlic, minced
1 cup chicken broth (low sodium)
1 cup heavy cream
½ tsp dried thyme or Italian seasoning
For the mashed potatoes:
2 lbs russet or Yukon gold potatoes, peeled and cubed
4 tbsp butter
½ cup milk (add more if needed)
Salt and pepper to taste
For the spinach:
1 tbsp olive oil or butter
6 cups fresh spinach
1 clove garlic, minced
Pinch of salt
Directions:
Make the mashed potatoes:
Boil potatoes in salted water until fork-tender, about 15–20 minutes. Drain and mash with butter, milk, salt, and pepper until smooth and creamy. Keep warm.
Cook the chicken:
Season chicken with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear the chicken for 5–6 minutes per side, until golden and cooked through. Remove and set aside.
Make the mushroom sauce:
In the same skillet, add butter and mushrooms. Cook for 5 minutes until mushrooms are golden. Add garlic and cook 1 more minute.
Pour in chicken broth and bring to a simmer. Stir in the cream and seasoning. Simmer for 4–5 minutes until the sauce thickens slightly. Return chicken to the skillet and spoon sauce over it. Simmer for another 2 minutes.
Sauté the spinach:
In a small pan, heat oil or butter. Add garlic and cook 30 seconds. Toss in spinach and a pinch of salt. Cook until wilted, about 2–3 minutes.
Assemble the plate:
Spoon mashed potatoes onto each plate, add a layer of sautéed spinach, then top with chicken and creamy mushroom sauce. Serve hot!
