Lemon Dill Shrimp with Garlic Butter Ravioli
Zesty Lemon Dill Shrimp Over Buttery Garlic Ravioli
Ingredients:
For the Shrimp:
1 lb shrimp, peeled and deveined
2 tablespoons olive oil
3 cloves garlic, minced
1 teaspoon lemon zest
2 tablespoons fresh lemon juice
1 teaspoon fresh dill, chopped (or ½ teaspoon dried dill)
½ teaspoon paprika
Salt and black pepper, to taste
For the Garlic Butter Ravioli:
12 oz cheese ravioli (fresh or frozen)
3 tablespoons unsalted butter
3 cloves garlic, minced
¼ cup heavy cream
½ teaspoon Italian seasoning
¼ teaspoon red pepper flakes (optional)
¼ cup Parmesan cheese, grated
2 tablespoons fresh parsley, chopped
Directions:
Cook the Ravioli:
Bring a pot of salted water to a boil. Cook the ravioli according to package instructions. Drain and set aside.
Prepare the Shrimp:
In a large skillet, heat olive oil over medium heat.
Add garlic and sauté for 30 seconds until fragrant.
Add shrimp, lemon zest, lemon juice, dill, paprika, salt, and black pepper.
Cook for 2-3 minutes per side or until shrimp turns pink and opaque. Remove from heat and set aside.
Make the Garlic Butter Sauce:
In the same skillet, melt butter over medium-low heat.
Add garlic and sauté for 30 seconds until fragrant.
Stir in heavy cream, Italian seasoning, and red pepper flakes. Let simmer for 1-2 minutes until slightly thickened.
Toss in the cooked ravioli and coat well in the sauce.
Assemble the Dish:
Plate the ravioli and top with the lemon dill shrimp.
Sprinkle with Parmesan cheese and fresh parsley before serving.
