Classic Bread and Butter Pudding ๐๐ฎ
A quintessential British comfort food, this traditional bread and butter pudding is the perfect way to use up leftover bread. Layered with buttered slices, plump raisins, and soaked in a rich custard, itโs baked to golden perfection with a crispy top and soft, creamy centre. A true nostalgic delight!
Ingredients:
๐ Stale white bread: 8 slices (ideally thick-cut)
๐ง Butter: 50g, softened
๐ฏ Golden syrup or jam: 2 tbsp (optional, for extra sweetness)
๐ Raisins or sultanas: 100g
๐ณ Eggs: 3 large
๐ฅ Whole milk: 500ml
๐ Caster sugar: 75g
๐ฎ Vanilla extract: 1 tsp
๐ Ground cinnamon or nutmeg: 1 tsp (optional, for extra flavour)
๐ง Demerara sugar: 1 tbsp (for sprinkling on top)
Method:
๐ Preheat the oven to 180ยฐC (fan)/200ยฐC/350ยฐF. Grease a 1.5-litre ovenproof dish.
๐ง Spread a thin layer of butter on each slice of bread. If using, spread a little golden syrup or jam on one side of each slice for added sweetness.
๐ Arrange the buttered bread slices in the dish, overlapping them slightly, and sprinkle raisins or sultanas between the layers.
๐ณ In a large bowl, whisk together the eggs, caster sugar, vanilla extract, and ground cinnamon (if using).
๐ฅ Gently heat the milk in a saucepan until just warm (not boiling), then pour it over the egg mixture, whisking to combine.
๐งโ๐ณ Pour the custard mixture over the layered bread, ensuring that itโs evenly soaked. Press the bread down gently to make sure it absorbs the liquid.
๐ฏ Sprinkle the top with a little demerara sugar for a crunchy finish.
๐งโ๐ณ Bake in the preheated oven for 35-40 minutes, or until the pudding is golden and slightly crispy on top, with the custard set.
