Strawberry Cheesecake Brownies
Ingredients:
For the Brownie Base:
1 box (18.3 oz) strawberry cake mix
1/3 cup (80ml) vegetable oil
2 large eggs
For the Cheesecake Layer:
8 oz (225g) cream cheese, softened
1/3 cup (65g) granulated sugar
1 large egg
1 tsp vanilla extract
For the Strawberry Crumble Topping:
3/4 cup (100g) crushed golden Oreos or shortbread cookies
3 tbsp (45g) strawberry gelatin powder (like Jell-O)
2 tbsp (30g) melted butter

Instructions:
1. Make the Brownie Base:
Preheat oven to 350°F (175°C). Line an 8x8-inch baking pan with parchment paper.
In a bowl, mix the strawberry cake mix, oil, and eggs until a thick batter forms.
Press the batter evenly into the bottom of the prepared pan.
2. Make the Cheesecake Layer:
In another bowl, beat the softened cream cheese and sugar until smooth.
Add the egg and vanilla extract, beating until creamy.
Spread the cheesecake mixture over the strawberry brownie layer.
3. Make the Crumble Topping:
In a small bowl, mix crushed cookies, strawberry gelatin powder, and melted butter until crumbly.
Sprinkle generously over the cheesecake layer.
4. Bake:
Bake for 28–32 minutes, or until the center is set and the top is lightly golden.
Cool completely, then chill in the fridge for at least 1 hour before slicing.
