Linguine in Cajun Garlic Butter Sauce with Savory Beef

Ingredients:

1 lb linguine pasta
2 tbsp olive oil
1 lb beef sirloin or flank steak, thinly sliced against the grain
1 tbsp Cajun seasoning
4 tbsp unsalted butter
4 cloves garlic, minced
1/2 cup chicken broth
1/4 cup heavy cream
1/2 cup grated Parmesan cheese
1/4 tsp salt (or to taste)
1/4 tsp black pepper
1/2 tsp smoked paprika
Fresh parsley, chopped for garnish

Directions:

1. Cook the Linguine: Bring a large pot of salted water to a boil and cook the linguine according to package instructions. Drain and set aside, reserving 1/2 cup of pasta water to help adjust the sauce later if needed.
2. Prepare the Beef: While the pasta is cooking, heat 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the thinly sliced beef and sprinkle with Cajun seasoning. Sear the beef for 3-4 minutes until it's browned and cooked through. Remove from the skillet and set aside.
3. Make the Cajun Garlic Butter Sauce: In the same skillet, melt 4 tablespoons of butter over medium heat. Add the minced garlic and sauté for 1-2 minutes, until fragrant. Stir in the chicken broth and bring it to a simmer.
4. Create the Creamy Sauce: Add the heavy cream and continue to simmer for 3-4 minutes until the sauce thickens slightly. Season with smoked paprika, salt, and black pepper. Adjust to taste.
5. Combine the Pasta and Beef: Add the cooked linguine to the skillet, tossing it gently in the Cajun garlic butter sauce. If the sauce is too thick, add the reserved pasta water to achieve your desired consistency. Add the cooked beef back to the skillet, and toss everything to combine.
6. Finish and Serve: Stir in the grated Parmesan cheese and garnish with fresh parsley. Serve hot, with extra Parmesan on the side if desired.
