Cajun Garlic Butter Tender Beef with Cheesy Rotini
Ingredients:
1 lb beef tenderloin or sirloin, sliced into tender strips
1 lb rotini pasta
3 tbsp unsalted butter
4 cloves garlic, minced
1 tbsp Cajun seasoning
1/2 tsp smoked paprika
1/2 tsp salt
1/4 tsp black pepper
1/2 cup heavy cream
1 cup shredded sharp cheddar cheese
1/2 cup freshly grated Parmesan cheese
1/4 cup chopped green onions
2 tbsp olive oil
Directions:
1. Cook the Pasta: Bring a large pot of salted water to a boil and cook the rotini pasta according to the package directions. Drain and set aside, reserving 1/2 cup of pasta water to adjust the sauce later if needed.
2. Sear the Beef: In a large skillet, heat 2 tablespoons of olive oil over medium-high heat. Add the sliced beef, season with Cajun seasoning, smoked paprika, salt, and pepper. Sear for about 3-4 minutes until the beef is golden brown and tender. Remove from the skillet and set aside.
3. Make the Sauce: In the same skillet, melt 3 tablespoons of butter over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant and golden. Reduce the heat to low, and pour in the heavy cream, stirring to create a smooth, velvety sauce.
4. Cheese Time: Stir in the shredded sharp cheddar and grated Parmesan cheese. Let them melt into the sauce, creating a creamy, cheesy coating.
5. Combine: Add the seared beef back to the skillet, tossing to coat with the sauce. If the sauce is too thick, add a splash of reserved pasta water to reach the desired consistency.
6. Finish with Pasta: Add the cooked rotini to the skillet, gently tossing to coat the pasta in the creamy Cajun garlic butter sauce. Make sure every twist of pasta is covered in the sauce.
