Cheesy Beef Taco Pasta
Ingredients:
1 lb ground beef
1 tablespoon olive oil
1 small onion, diced
2 cloves garlic, minced
1 packet taco seasoning
2 cups beef broth
1 (10 oz) can diced tomatoes with green chilies
8 oz pasta (penne, rotini, or shells work great)
1 cup shredded cheddar cheese
1 cup shredded Monterey Jack cheese
1/2 cup sour cream
Fresh cilantro, chopped (for garnish)
Directions:
In a large skillet or deep pan, heat olive oil over medium heat. Add the onion and garlic, sauté until fragrant, about 2-3 minutes.
Add ground beef and cook until browned. Drain excess fat.
Stir in the taco seasoning, beef broth, and diced tomatoes with green chilies.
Add the uncooked pasta to the skillet and stir to combine.
Bring the mixture to a simmer. Cover and cook for 12-15 minutes, stirring occasionally, until the pasta is tender and most of the liquid is absorbed.
Remove from heat and stir in the shredded cheddar, Monterey Jack cheese, and sour cream until creamy and fully melted.
Garnish with chopped cilantro and serve hot!
