Crispy Honey-Glazed Bacon Roasted Potatoes
Ingredients:
2 pounds baby potatoes, halved
6 slices bacon, chopped
3 tablespoons honey
2 tablespoons olive oil
1 teaspoon garlic powder
1 teaspoon paprika
1/2 teaspoon black pepper
1/2 teaspoon salt
2 tablespoons fresh parsley, chopped for garnish
Directions:
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a large bowl, toss the halved potatoes with olive oil, garlic powder, paprika, salt, and pepper.
Spread the potatoes out evenly on the baking sheet. Scatter the chopped bacon over the potatoes.
Roast for 25-30 minutes, flipping halfway through, until the potatoes are golden and crispy and the bacon is cooked.
Drizzle the honey over the potatoes and bacon and toss gently to coat.
Return to the oven for an additional 5 minutes to caramelize the honey.
Remove from oven, sprinkle with fresh parsley, and serve hot!
