Deliciously Hearty Vegan Meatless Loaf with Chickpeas & Lentils 🥖✨
Ingredients:
- 1 cup cooked chickpeas
- 1 cup cooked lentils
- ½ cup rolled oats
- ¼ cup ground flaxseeds
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 small carrot, grated
- 1 tbsp soy sauce (or tamari for gluten-free)
- 1 tsp smoked paprika
- ½ tsp cumin
- ½ tsp dried thyme
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp olive oil
For the Glaze:
- 3 tbsp tomato paste
- 1 tbsp maple syrup
- 1 tsp apple cider vinegar
Directions:
1. Preheat oven to 375°F (190°C). Grease a loaf pan.
2. In a food processor, pulse chickpeas and lentils until slightly mashed.
3. Transfer to a bowl and mix in oats, flaxseeds, onion, garlic, carrot, soy sauce, smoked paprika, cumin, thyme, salt, black pepper, and olive oil. Stir until well combined.
4. Press the mixture firmly into the loaf pan.
5. Mix tomato paste, maple syrup, and apple cider vinegar in a bowl. Spread the glaze over the top of the loaf.
6. Bake for 40-45 minutes until firm and golden.
7. Let cool slightly before slicing. Serve with your favorite sides!
