🍌 Banana Bread Cinnamon Rolls 🍌
Ingredients:
For the Dough:
1 cup mashed ripe banana (about 2 medium bananas)
¼ cup granulated sugar
¼ cup packed light brown sugar
½ cup (1 stick) unsalted butter, melted and slightly cooled
1 large egg, room temperature
½ cup whole milk, warmed to 110°F (43°C)
2¼ tsp (1 packet) active dry yeast
3¼ cups all-purpose flour, plus more as needed
1 tsp salt
1 tsp ground cinnamon
For the Filling:
½ cup packed light brown sugar
1½ tbsp ground cinnamon
¼ tsp salt
¼ cup (½ stick) unsalted butter, softened
For the Glaze:
4 oz (½ cup) full-fat cream cheese, softened
2 tbsp unsalted butter, softened
1 cup powdered sugar, sifted
1–2 tsp milk or heavy cream
½ tsp pure vanilla extract
Instructions:
Activate the Yeast
In a small bowl, combine warm milk and yeast. Let sit for 5–7 minutes until foamy. If it doesn’t bubble, your yeast may be expired—start over with fresh yeast.
Make the Dough
In a large bowl, whisk mashed banana, granulated sugar, brown sugar, melted butter, and egg until smooth. Stir in the foamy yeast mixture. Gradually add flour, salt, and cinnamon, mixing with a wooden spoon until a shaggy dough forms. Turn onto a lightly floured surface and knead 5–7 minutes until smooth and elastic (add flour 1 tbsp at a time if too sticky). Place in a greased bowl, cover with a damp towel, and let rise in a warm spot for 1–1.5 hours, or until doubled.
Prepare the Filling
While dough rises, mix brown sugar, cinnamon, and salt in a small bowl. Set aside.
Roll & Fill
Punch down risen dough and roll out on a floured surface into a 16x12-inch rectangle. Spread softened butter evenly over the surface, then sprinkle the cinnamon-sugar mixture on top, pressing gently to adhere.
Shape the Rolls
Starting from a long side, tightly roll the dough into a log. Pinch the seam to seal. Cut into 12 even slices (about 1½ inches thick) using a sharp knife or dental floss for clean cuts. Place cut-side up in a greased 9x13-inch baking pan.
Second Rise & Bake
Cover loosely and let rise 30–45 minutes until puffy. Meanwhile, preheat oven to 350°F (175°C). Bake for 22–26 minutes, until golden brown and cooked through (internal temp should read 190°F).
Glaze & Serve
While rolls cool slightly, beat cream cheese and butter until smooth. Add powdered sugar, vanilla, and 1 tsp milk; mix until creamy. Add more milk if needed for drizzling consistency. Pour over warm rolls just before serving.
