Italian Spumoni Cake 🍒
Ingredients:
- 1 chocolate cake layer (boxed or homemade)
- 1 pistachio cake layer (use instant pistachio pudding mix for color/flavor)
- 1 cherry cake layer (use maraschino cherry juice + chopped cherries)
- 1 1/2 cups heavy whipping cream
- 1/2 cup powdered sugar
- 1/2 teaspoon vanilla extract
- 1/2 cup chopped cherries
- 1/4 cup mini chocolate chips
Directions:
1. Prepare the three cake layers separately according to your chosen recipes or box instructions, adding pistachio pudding mix to the pistachio layer batter and maraschino cherry juice plus chopped cherries to the cherry layer for authentic flavor.
2. Allow the cake layers to cool completely before assembling.
3. In a chilled bowl, whip the heavy cream with powdered sugar and vanilla extract until stiff peaks form.
4. Gently fold the chopped cherries and mini chocolate chips into the whipped cream to create the filling and frosting.
5. Place the chocolate cake layer on a serving plate and spread a layer of the cherry-pistachio cream mixture evenly over it.
6. Add the pistachio cake layer on top and repeat the cream frosting.
7. Top with the cherry cake layer and cover the entire cake with the remaining cream mixture.
8. Refrigerate the assembled cake for at least 2 hours to set before serving.
