Pineapple Cream Cheese Cobbler
Ingredients:
- 2 cups fresh pineapple chunks
- 8 oz cream cheese, softened
- 1 cup all-purpose flour
- 1 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 1/2 cup milk
- 1 teaspoon baking powder
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Directions:
1. Preheat oven to 350°F (175°C).
2. In a medium bowl, whisk together flour, sugar, baking powder, and salt.
3. In another bowl, combine softened cream cheese, milk, melted butter, and vanilla extract until smooth.
4. Gradually add the dry ingredients to the cream cheese mixture, stirring until just combined.
5. Fold in the pineapple chunks gently.
6. Pour the batter into a greased 8x8 inch baking dish.
7. Bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted in the center comes out clean.
8. Allow to cool slightly before serving. Optionally, serve warm with a scoop of vanilla ice cream.
