For the Cake (2 layers):

• 1 cup unsalted butter, softened
• 2 tbsp instant coffee dissolved in 1 tbsp hot water (cooled)
• 2½–3 cups powdered sugar (adjust for sweetness)
• 1 tsp vanilla extract
• 2 tbsp heavy cream or milk (for smoother texture)
• Pinch of salt

🍰 Instructions
1️⃣ Make the Cake
1. Preheat the oven to 350°F (175°C). Grease and line two 8-inch round pans with parchment paper.
2. In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
3. In a separate large bowl, beat sugar, brown sugar, and oil until smooth and combined.
4. Add eggs one at a time, followed by vanilla and buttermilk. Mix until well blended.
5. Stir in the dissolved coffee mixture.
6. Gradually fold in the dry ingredients until just combined.
7. Add the extra ½ cup of hot water and stir gently — the batter will be thin (that’s what makes it ultra moist).
8. Pour the batter evenly into the prepared pans.
9. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
10. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
