Chocolate Coffee Cream Cake 🍫

🧁 Ingredients

For the Cake (2 layers):
• 2 cups all-purpose flour
• ¾ cup unsweetened cocoa powder
• 2 tsp baking powder
• 1½ tsp baking soda
• ½ tsp salt
• 1 cup granulated sugar
• ¾ cup brown sugar
• ½ cup vegetable oil
• 1 cup buttermilk (or 1 cup milk + 1 tbsp vinegar)
• 2 large eggs
• 1 tsp vanilla extract
• 1 tbsp instant coffee dissolved in ½ cup hot water
• ½ cup additional hot water (for extra moisture)

For the Coffee Cream Frosting:
• 1 cup unsalted butter, softened
• 2 tbsp instant coffee dissolved in 1 tbsp hot water (cooled)
• 2½–3 cups powdered sugar (adjust for sweetness)
• 1 tsp vanilla extract
• 2 tbsp heavy cream or milk (for smoother texture)
• Pinch of salt



🍰 Instructions

1️⃣ Make the Cake
1. Preheat the oven to 350°F (175°C). Grease and line two 8-inch round pans with parchment paper.
2. In a medium bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt.
3. In a separate large bowl, beat sugar, brown sugar, and oil until smooth and combined.
4. Add eggs one at a time, followed by vanilla and buttermilk. Mix until well blended.
5. Stir in the dissolved coffee mixture.
6. Gradually fold in the dry ingredients until just combined.
7. Add the extra ½ cup of hot water and stir gently — the batter will be thin (that’s what makes it ultra moist).
8. Pour the batter evenly into the prepared pans.
9. Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.
10. Let the cakes cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.



2️⃣ Make the Coffee Cream Frosting
1. Beat butter on high speed until creamy and pale.
2. Add the dissolved coffee and vanilla extract.
3. Gradually add powdered sugar and a pinch of salt, mixing until smooth.
4. Add cream or milk and beat for another minute until light and fluffy.



3️⃣ Assemble the Cake
1. Place one cooled cake layer on a serving plate. Spread a generous layer of coffee cream frosting on top.
2. Add the second cake layer and frost the top and sides evenly.
3. Decorate with chocolate shavings, coffee beans, or a light drizzle of chocolate ganache for a stunning finish.
