Sweet Potato Honeybun Cake with Pecan Icing
Ingredients:
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 cup cooked and mashed sweet potato
- 1/2 cup buttermilk
- 1/2 cup brown sugar
- 1 teaspoon ground cinnamon
- 1/4 cup unsalted butter, melted
For the Pecan Icing:
- 4 ounces cream cheese, softened
- 1/4 cup unsalted butter, softened
- 1 1/2 cups powdered sugar, sifted
- 1 teaspoon vanilla extract
- 1/2 cup chopped pecans
Directions:
1. Preheat oven to 350°F (175°C). Grease and flour a 9x13-inch baking pan.
2. In a medium bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
3. In a large bowl, beat softened butter and granulated sugar until light and fluffy. Add eggs one at a time, beating well after each addition. Stir in vanilla extract.
4. Mix in mashed sweet potato.
5. Alternately add flour mixture and buttermilk to the butter mixture, beginning and ending with the flour mixture. Stir until just combined.
6. In a small bowl, combine brown sugar, cinnamon, and melted butter.
7. Pour half of the batter into the prepared pan. Sprinkle half of the brown sugar mixture evenly over the batter.
8. Pour the remaining batter over the sugar mixture. Sprinkle the remaining brown sugar mixture on top.
9. Using a knife or skewer, swirl the layers gently to create a marbled effect.
10. Bake for 35-40 minutes, or until a toothpick inserted into the center comes out clean. Allow cake to cool completely in the pan.
11. For the icing, beat cream cheese and butter until smooth. Gradually add powdered sugar and vanilla, beating until fluffy.
12. Fold in chopped pecans.
13. Spread pecan icing evenly over the cooled cake.
