1. Pickled Red Onion

Recipe:
1 large red onion, thinly sliced
1/2 cup apple cider vinegar
1/2 cup water
1/4 tsp whole black peppercorns
1/4 tsp fine sea salt
1 bay leaf

Steps:
In a small pot over high heat, combine the vinegar, water, peppercorns, salt, and bay leaf. Bring to a boil then remove from the heat.
Put the sliced onions in a medium bowl. Pour the hot liquid over the sliced onions. Let it sit for at least 30 minutes.
Store in a an airtight container in the refrigerator for up to 1 months. Enjoy!

2. Easy Pickled Daikon with carrots and onions

Ingredients:
2 cups boiling water
1 cup apple cider vinegar
1/2 cup sugar
1 tablespoon salt
1/3 red onion thinly sliced
1 medium carrot julienned
1 daikon (8-10 inch long) julienned
1 banana peppers sliced (optional)

Need: * 2-3 pints - jar
Steps:
Prepare 3 pints jar. In a large bowl, add sliced daikon, carrots, onions or banana peppers. Fill each jar with mix vegetables. Leave 1 inch on top. Set aside while we prepare the brine.
In a pan, boiled the water. Add the salt and sugar. Mix well until dissolved. Pour in the vinegar. Mix well till combined.
Pour the vinegar mixture the prepared jar. Let it cool in the countertop at least 2 hrs. Then, refrigerate before serving.
Store in the refrigerator up to 1 month. Drain the juice when ready to use. Enjoy!
