Zesty Lemon Cream Cheese Delight Roll

Ingredients:
4 large eggs, separated
1 cup granulated sugar, divided
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt
8 ounces cream cheese, softened
1/2 cup powdered sugar
1 tablespoon lemon zest
2 tablespoons fresh lemon juice
1 teaspoon vanilla extract
1/2 cup heavy cream
Directions:
Preheat the oven to 350°F (175°C). Grease a 10x15-inch jelly roll pan and line with parchment paper.
In a large bowl, beat the egg whites until stiff peaks form. Gradually add 1/2 cup of the granulated sugar, continuing to beat until glossy.
In a separate bowl, whisk together the egg yolks, remaining 1/2 cup of granulated sugar, and 1 teaspoon of vanilla extract until smooth.
Gently fold the egg whites into the yolk mixture, followed by the flour, baking powder, and salt. Spread the batter evenly in the prepared pan.
Bake for 12-15 minutes, or until the top springs back when lightly pressed. Remove from the oven and let it cool slightly.
In a medium bowl, combine the softened cream cheese, powdered sugar, lemon zest, and lemon juice. Beat until smooth and creamy.
In a separate bowl, whip the heavy cream until stiff peaks form. Fold it into the cream cheese mixture.
Carefully flip the cooled cake onto a clean kitchen towel dusted with powdered sugar. Peel off the parchment paper.
Spread the cream cheese filling evenly over the cake, leaving a small border around the edges. Roll up the cake gently using the towel for support.
Chill the rolled cake in the fridge for at least an hour before slicing and serving.
