🍪 Cinnamon Roll Cookies 🌟
Ingredients:
For the Cookies:
2 ½ cups all-purpose flour
1 teaspoon baking powder
¼ teaspoon salt
1 cup unsalted butter, softened
¾ cup granulated sugar
1 large egg
1 teaspoon vanilla extract
½ cup packed light brown sugar
1 tablespoon ground cinnamon
For the Glaze:
4 ounces cream cheese, softened
2 tablespoons unsalted butter, softened
1 ½ cups powdered sugar
½ teaspoon vanilla extract
2–3 tablespoons milk (adjust for desired consistency)
Instructions:
Prepare the Dough: In a medium bowl, whisk together the flour, baking powder, and salt. Set aside. In a large mixing bowl, cream the softened butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract until fully combined. Gradually mix in the dry ingredients until a soft dough forms.
Create the Cinnamon Filling: On a lightly floured surface, roll the dough into a 12x9-inch rectangle. In a small bowl, mix the brown sugar and cinnamon. Spread the softened butter evenly over the dough, leaving a small border around the edges. Sprinkle the cinnamon-sugar mixture evenly over the buttered dough.
Roll and Slice: Starting from the long side, tightly roll the dough into a log. Use a sharp knife to slice the log into 12 equal pieces. Place the slices onto a parchment-lined baking sheet, leaving space between each cookie.
Bake the Cookies: Preheat your oven to 350°F (175°C). Bake the cookies for 12–14 minutes, or until the edges are lightly golden. Allow the cookies to cool completely on a wire rack before glazing.
Make the Glaze: In a medium bowl, beat the softened cream cheese and butter until smooth. Gradually add the powdered sugar and vanilla extract, mixing until creamy. Add milk, one tablespoon at a time, until the glaze reaches your desired consistency.
Finish and Serve: Drizzle the glaze generously over the cooled cookies. Allow the glaze to set for a few minutes before serving. Enjoy the warm, comforting flavors in every bite!
