Grilled Salmon Power Bowl with Kale, Avocado, and Mango 🥗🐟🥑
Ingredients:
For the Salmon:
- 4 salmon fillets (6 oz each)
- 1 tablespoon olive oil
- 1 teaspoon honey
- 1 tablespoon soy sauce (low sodium)
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
For the Bowl:
- 2 cups kale, chopped
- 1 tablespoon olive oil
- 1/2 teaspoon garlic powder
- 1 cup cherry tomatoes, halved
- 1 avocado, sliced
- 1 mango, sliced
- 2 tablespoons fresh parsley or cilantro, chopped
For Dressing (Optional):
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon honey
- Salt and black pepper to taste
Directions:
1. Preheat a grill or grill pan to medium heat. Mix olive oil, honey, soy sauce, garlic powder, and black pepper in a small bowl. Brush over the salmon fillets.
2. Grill the salmon for 4-5 minutes per side, or until it flakes easily with a fork. Set aside.
3. Heat 1 tablespoon olive oil in a skillet over medium heat. Add chopped kale and garlic powder. Sauté for 2-3 minutes until wilted.
4. Assemble the bowls: Divide the sautéed kale among 4 bowls. Add grilled salmon, cherry tomatoes, avocado slices, and mango slices.
5. Drizzle with the optional dressing made by whisking olive oil, lemon juice, honey, salt, and pepper. Garnish with fresh parsley or cilantro.
6. Serve immediately and enjoy a fresh and vibrant meal!
