Golden Green Matcha & Turmeric Chia Seed Pudding Breakfast Jar ✨🍵💛
ingredients:
¼ cup (40g) chia seeds
1 ½ cups (360ml) unsweetened plant-based milk (coconut milk recommended for creaminess, almond or oat also work)
1 tsp matcha powder (culinary grade)
½ tsp ground turmeric
¼ tsp ground ginger (optional)
1-2 tsp maple syrup, agave nectar, or sweetener of choice (adjust to taste)
½ tsp vanilla extract (optional)
Pinch of black pepper (helps with turmeric absorption)
directions:
1. In a medium bowl or large jar, whisk together the plant-based milk, matcha powder, turmeric, ginger (if using), sweetener, vanilla (if using), and pinch of black pepper until the powders are fully dissolved and there are no clumps. Using a small whisk works well.
2. Add the chia seeds to the liquid mixture.
3. Whisk everything together very well, ensuring the chia seeds are fully incorporated and starting to disperse throughout the liquid.
4. Let the mixture sit for 5-10 minutes, then whisk again vigorously to break up any clumps of chia seeds that may have formed.
5. Cover the bowl or seal the jar and place it in the refrigerator for at least 4 hours, or preferably overnight, until the pudding is thick and the chia seeds have fully gelled.
6. Before serving, stir the pudding well. If it's thicker than you like, add a splash more plant-based milk. Taste and adjust sweetness if needed.
7. Serve chilled. Top with fresh fruit (like mango or berries), coconut flakes, nuts, or seeds if desired.
