Servings: 4
Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes
Ingredients:
For the Filet Mignon:
4 filet mignon steaks (about 6 oz each)
Salt and black pepper, to taste
2 tablespoons olive oil
2 tablespoons unsalted butter
Fresh thyme sprigs (optional, for garnish)
For the Creamy Parmesan Mustard Sauce:
1 cup heavy cream
1/2 cup freshly grated Parmesan cheese
2 tablespoons Dijon mustard
1 teaspoon whole grain mustard (optional, for texture)
1 teaspoon garlic powder
1 tablespoon butter
Salt and black pepper, to taste
Instructions:
Prepare the Filet Mignon:
Season the filet mignon steaks generously with salt and black pepper on both sides.
Heat a large skillet over medium-high heat. Add olive oil and butter to the pan and let it melt. When the butter starts to foam, add the filet mignon steaks.
Sear the steaks for about 3-4 minutes per side for medium-rare (130°F/54°C internal temperature), or adjust to your preferred doneness. Once seared, remove the steaks from the pan and let them rest for 5 minutes.
Make the Creamy Parmesan Mustard Sauce:
In the same skillet, reduce the heat to medium and add 1 tablespoon of butter.
Stir in the heavy cream, garlic powder, and Dijon mustard. If you like texture, add whole grain mustard as well.
Let the sauce simmer for 2-3 minutes, then stir in the freshly grated Parmesan cheese. Continue stirring until the sauce thickens and becomes creamy.
Season the sauce with salt and black pepper to taste.
Serve:
Place the filet mignon on individual plates, spoon the creamy Parmesan mustard sauce over the top of each steak, and garnish with fresh thyme sprigs if desired.
Tips:
For added richness, you can deglaze the pan with a splash of white wine or beef broth before adding the cream.
Serve with roasted vegetables or mashed potatoes to complement the steak and sauce.
