Rich and Savory Lentil Stroganoff with Mushrooms 🥗🍜
Ingredients:
- 1 cup cooked green or brown lentils
- 250 g mushrooms, sliced
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 tbsp olive oil
- 1 cup vegetable broth
- 1/2 cup coconut cream or cashew cream
- 1 tbsp soy sauce
- 1 tsp Dijon mustard
- 1/2 tsp smoked paprika
- Salt and pepper to taste
- 250 g cooked pasta of your choice
Directions:
1. Heat olive oil in a large skillet over medium heat. Sauté onions and garlic until fragrant.
2. Add mushrooms and cook until softened and slightly browned.
3. Stir in lentils, vegetable broth, coconut cream, soy sauce, Dijon mustard, smoked paprika, salt, and pepper. Simmer for 5-7 minutes until the sauce thickens.
4. Add the cooked pasta to the skillet and toss to coat in the creamy stroganoff sauce.
5. Serve warm, garnished with fresh parsley, and enjoy this comforting dish.
