Vibrant Mediterranean Falafel Grain Bowl with Creamy Hummus
Ingredients:
- 1 cup cooked quinoa or farro
- 6 falafel balls (store-bought or homemade)
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- ½ cup Kalamata olives, sliced
- 1 cup fresh spinach or arugula
- ¼ cup hummus (store-bought or homemade)
- 2 tablespoons tahini
- 1 tablespoon lemon juice
- 1 tablespoon olive oil
- Salt and pepper to taste
Directions:
1. Cook quinoa or farro according to package instructions. Set aside to cool slightly.
2. Heat the falafel balls in the oven or skillet until crispy and warm.
3. Assemble the bowl: Start with a base of quinoa or farro. Layer spinach, cherry tomatoes, cucumber, and olives. Add falafel on top.
4. In a small bowl, whisk together tahini, lemon juice, olive oil, salt, and pepper. Drizzle over the bowl.
