🌟 Easter Jello Parfait Cups 🍓
Ingredients
For the Gelatin Layer:
1 box (3 oz) strawberry gelatin mix
2 cups (480ml) boiling water
For the Pudding Layer:
1 box (3.4 oz) instant vanilla pudding mix
2 cups (480ml) cold milk
For the Toppings:
1 cup (240ml) whipped topping (e.g., Cool Whip), thawed
½ cup (50g) crushed vanilla wafers or shortbread cookies
Mini marshmallows (optional, for garnish)
Chocolate Easter eggs or colorful sprinkles (for decoration)
Instructions
Create the Gelatin Base: In a medium bowl, combine the strawberry gelatin mix with boiling water. Stir until the powder is completely dissolved. Let the mixture cool for 10 minutes, then transfer it to the refrigerator. Chill for about 1.5–2 hours, or until it reaches a syrupy, slightly thickened consistency.
Whip Up the Pudding: In a separate bowl, whisk the instant vanilla pudding mix with cold milk for 2 minutes until smooth and thickened. Let it rest for 5 minutes to set further.
Layer the Parfaits: Grab clear glasses or dessert cups. Start with a spoonful of the semi-set gelatin as the base. Add a layer of vanilla pudding, followed by a dollop of whipped topping. Sprinkle a handful of crushed cookies over the whipped topping. Repeat the layers until the cups are filled, ending with whipped topping and a final dusting of cookie crumbs.
Add Festive Touches: Top each parfait with mini marshmallows, chocolate Easter eggs, or a sprinkle of colorful sprinkles for a cheerful finish.
Chill and Serve: Cover the parfaits with plastic wrap and refrigerate for at least 1 hour to let the layers set and the flavors blend. Serve chilled for a refreshing and eye-catching dessert!
