Jalapeño Bottle Caps
Ingredients:
- Canola oil, for frying
- 1 cup all-purpose flour
- ½ teaspoon salt
- ½ teaspoon smoked paprika
- ½ teaspoon garlic powder
- ¼ teaspoon black pepper
- 2 large eggs, lightly beaten
- ¾ to 1 cup American style lite beer (Miller Lite, Bud Lite or Coors Lite)
- 1 ½ cups fresh jalapeno slices, ¼ inch thick rings (from 4-5 large jalapenos)
Directions:
1. Heat canola oil in a deep skillet or fryer to 350°F (175°C).
2. In a mixing bowl, combine flour, salt, smoked paprika, garlic powder, and black pepper.
3. In a separate bowl, whisk together the eggs and beer until smooth.
4. Dip jalapeno slices into the flour mixture, then into the beer batter, and back into the flour mixture for a double coating.
5. Carefully drop the coated jalapeno slices into the hot oil, frying in batches to avoid overcrowding.
6. Fry for 2-3 minutes or until golden brown and crispy.
7. Remove with a slotted spoon and drain on paper towels.
8. Serve warm with your favorite dipping sauce.
