🇮🇹 Italian Pasta alla Gricia
A Roman pasta dish with guanciale and Pecorino Romano.
Ingredients
Rigatoni: 250 g
Guanciale: 150 g, diced
Pecorino Romano: 50 g, grated
Black pepper: 1 tsp
Instructions
1️⃣ Cook pasta until al dente.
2️⃣ Fry guanciale until crispy.
3️⃣ Drain pasta, reserving some water.
4️⃣ Toss pasta with guanciale and pepper.
5️⃣ Stir in Pecorino with a splash of pasta water.
6️⃣ Serve immediately.
