Pumpkin Cake Mix Cookies
Ingredients:
- 1 box spice cake mix or cinnamon cake mix (15.25 oz box)
- 1 can pumpkin puree (15 oz can)
For the Glaze:
- 1 1/4 cups powdered sugar
- 3 tablespoons milk
- 1/2 teaspoon vanilla extract
Directions:
1. Preheat oven to 350°F (175°C) and line baking sheets with parchment paper.
2. In a large bowl, mix the cake mix and pumpkin puree until well combined and smooth.
3. Drop spoonfuls of the dough onto the prepared baking sheets, spacing them about 2 inches apart.
4. Bake for 12-15 minutes, or until the edges are set and a toothpick inserted in the center comes out clean.
5. While the cookies cool, prepare the glaze by whisking together powdered sugar, milk, and vanilla extract until smooth.
6. Once the cookies are completely cooled, drizzle or spread the glaze over the top.
7. Allow the glaze to set before serving.

Tips:
Use canned pumpkin puree, not pumpkin pie filling, for best texture and flavor.
If glaze is too thick, add milk a teaspoon at a time until desired consistency is reached.
