Shepherd’s Pie Soup
1 chopped tiny onion
2 minced garlic cloves
1 pound of ground turkey or beef
2 sliced carrots
chopped celery (two stalks)
3 cups of broth, either beef or chicken
Defrost 1 cup of peas
1 cup of corn, frozen
Peel and dice one big potato.
1/2 cup milk or heavy cream
Fresh thyme, minced
Dried rosemary, 1 teaspoon
Adjust with salt & pepper as desired.
Chopped fresh parsley (for garnishing)
Extra not included: Topped with crumbled cheddar cheese
What to do:
Get the Meat Done: Warm the olive oil in a big saucepan over medium heat. Toss in some ground turkey or beef and brown it while breaking it up in the pan. If needed, remove any surplus fat.
