🥣 Beef Barley Soup 🥕

Ingredients:

1 lb beef stew meat, cut into small cubes
1 cup pearl barley
1 onion, diced
2 cloves garlic, minced
3 carrots, diced
2 celery stalks, diced
6 cups beef broth
1 can (14.5 oz) diced tomatoes
1 tbsp olive oil
1 bay leaf
1/2 tsp dried thyme
Salt and pepper, to taste
Fresh parsley, for garnish (optional)
Instructions:

Heat olive oil in a large pot over medium heat. Brown the beef cubes until seared on all sides.
Add diced onion, garlic, carrots, and celery; sauté until softened.
Pour in beef broth and diced tomatoes, then add barley, bay leaf, and thyme.
Bring to a boil, then reduce heat and let simmer for 1 hour, stirring occasionally.
Season with salt and pepper. Remove bay leaf before serving.
Garnish with fresh parsley if desired.
Notes:

For a richer flavor, brown the beef in batches to avoid overcrowding.
Add a splash of Worcestershire sauce for extra depth.
