Garlic Butter Salmon with Spinach and Orzo
Creamy Garlic Salmon with Wilted Spinach and Tender Orzo
Ingredients:

4 salmon fillets (skin-on or skinless, as preferred)
2 tablespoons unsalted butter
3 garlic cloves, minced
1 cup orzo pasta
2 cups fresh spinach, chopped
1 1/2 cups low-sodium chicken broth
1/2 cup grated Parmesan cheese
1/2 cup heavy cream
1 tablespoon olive oil
1 teaspoon smoked paprika
1/2 teaspoon red pepper flakes (optional)
Salt and pepper, to taste
Fresh parsley, chopped (for garnish)
Directions:

Heat olive oil in a large skillet over medium heat. Season the salmon fillets with smoked paprika, salt, and pepper. Cook the salmon for 3-4 minutes per side until golden and cooked through. Remove from the skillet and set aside.
In the same skillet, melt the butter and sauté the garlic until fragrant, about 1 minute.
Add the orzo pasta and stir well to coat with the butter and garlic. Pour in the chicken broth, cover, and simmer on low heat for 8-10 minutes, stirring occasionally until the orzo is tender and has absorbed most of the liquid.
Stir in the heavy cream and Parmesan cheese until smooth and creamy. Add the spinach and cook for 1-2 minutes until wilted.
Return the salmon fillets to the skillet and spoon the creamy orzo mixture over them. Cook for an additional 2 minutes to warm through.
Garnish with fresh parsley and serve immediately.
