Jam Roly-Poly ๐๐ฐ
This classic British dessert is a delightful treat for any occasion. It's a simple rolled-up sponge cake filled with jam and steamed to perfection. Get ready for a taste of teatime tradition!
Ingredients:
๐พ Plain flour: 150g
๐ง Softened butter: 50g
๐ง Caster sugar: 75g
๐ฅ Large eggs: 2
๐ฅ Baking powder: 1 tsp
๐ฅ Milk: 50ml
๐ Seedless jam: 2 tbsp (apricot or raspberry)
Method:
โจ๏ธ Preheat your oven to 180ยฐC (160ยฐC fan/Gas Mark 4).
๐ฝ๏ธ Grease and line a rectangular baking tin (approximately 20cm x 30cm) with baking parchment.
๐ In a large bowl, rub the butter into the flour until the mixture resembles fine breadcrumbs.
๐ง Add the caster sugar, baking powder, and a pinch of salt. Stir to combine.
๐ฅ๐ฅ In a separate bowl, whisk together the eggs and milk.
๐ฅฃ Gradually pour the egg and milk mixture into the dry ingredients, mixing until just combined. Be careful not to overmix.
๐ฐ Pour the batter into the prepared tin and spread it out evenly.
โฐ Bake for 10-15 minutes, or until golden brown and a skewer inserted into the centre comes out clean.
โณ Remove the sponge cake from the oven and leave it to cool slightly in the tin.
๐ Spread the jam evenly over the cooled sponge cake.
๐ Starting from one of the long sides, carefully roll up the sponge cake into a tight log.
๐งบ Place the rolled-up sponge cake seam-side down in a lightly greased and lined steamer.
โจ๏ธ Steam for 15-20 minutes, or until cooked through.
๐จ Remove the Jam Roly-Poly from the steamer and leave it to cool slightly before serving. Cut into slices and enjoy with custard, cream, or ice cream.
