Creamy Crockpot Beef Tips & Mushrooms 🍄

Ingredients:

2 lbs beef stew meat or beef tips, cut into chunks

1 tablespoon olive oil

1 medium onion, chopped

3 cups sliced mushrooms

2 cloves garlic, minced

1 can (10.5 oz) cream of mushroom soup

1 cup beef broth

1 tablespoon Worcestershire sauce

1 teaspoon onion powder

1/2 teaspoon black pepper

1/2 cup sour cream (add at the end)

Fresh parsley for garnish (optional)

Cooked egg noodles or mashed potatoes for serving

Directions:

In a large skillet, heat olive oil over medium-high heat. Sear the beef tips for 2–3 minutes on each side just to brown. (You can skip this step if you're short on time, but it adds great flavor!)

Add the browned beef to the crockpot.

Add the chopped onion, mushrooms, and minced garlic on top.

In a bowl, whisk together the cream of mushroom soup, beef broth, Worcestershire sauce, onion powder, and pepper. Pour over the beef and veggies in the crockpot.

Cover and cook on LOW for 7–8 hours or HIGH for 4–5 hours, until the beef is tender.

About 15 minutes before serving, stir in the sour cream to make the sauce rich and creamy.

Serve over warm egg noodles or fluffy mashed potatoes. Garnish with fresh parsley if desired.
