Strawberry Syrup 🍓

Ingredients:
1 teaspoon lemon juice
1 cup granulated sugar
1/2 teaspoon vanilla extract (optional)
1 cup water
4 cups fresh strawberries, hulled and halved
Instructions:
In a large saucepan, combine the hulled and halved strawberries with the granulated sugar and water. Stir well to mix the ingredients.
Place the saucepan over medium-high heat and bring the mixture to a vigorous boil.
Once boiling, reduce the heat to medium-low and let it simmer gently for about 15-20 minutes. You'll know it's done when the strawberries are softened and the syrup turns a rich, deep red color.
Using a potato masher or the back of a spoon, gently mash the strawberries to release even more of their delicious juice.
Remove the saucepan from the heat and strain the mixture through a fine-mesh sieve into a clean bowl, discarding the leftover strawberry solids.
Stir in the lemon juice and, if you're feeling adventurous, the optional vanilla extract for an extra layer of flavor.
Allow the syrup to cool to room temperature, then transfer it into a sterilized bottle or jar. This delightful syrup can be stored in the refrigerator for up to two weeks.
