Quick & Easy Blueberry Chia Seed Jam No Pectin Needed! 🫐✨
Ingredients:
2 cups / 300g fresh or frozen blueberries
2 tbsp / 30ml maple syrup or honey (adjust to taste)
2 tbsp / 25g chia seeds
1 tbsp / 15ml lemon juice
1 tsp / 5ml vanilla extract (optional)
Directions:
1. Combine blueberries and maple syrup (or honey) in a medium saucepan over medium heat.
2. Bring the mixture to a simmer, stirring occasionally. Cook for 5-7 minutes, gently mashing some of the blueberries with the back of a spoon, until the berries have softened and released their juices.
3. Remove the saucepan from the heat. Stir in the chia seeds, lemon juice, and vanilla extract (if using).
4. Stir well to ensure the chia seeds are evenly distributed.
5. Let the mixture sit for at least 10-15 minutes. As it cools, the chia seeds will absorb the liquid and the mixture will thicken into a jam-like consistency. Stir occasionally during this time.
6. If you prefer a smoother jam, you can use an immersion blender to blend it slightly once thickened, or transfer to a regular blender.
7. Taste and add more sweetener if desired.
8. Transfer the blueberry chia spread to a clean jar or airtight container. Store in the refrigerator for up to 2 weeks.
