Baked Potato Chicken and Broccoli Casserole
Ingredients:
4 medium russet potatoes, cubed
2 cups cooked chicken breast, shredded or cubed
2 cups broccoli florets, steamed
1 cup cheddar cheese, shredded
1/2 cup sour cream
1/4 cup milk
1/4 cup cream cheese, softened
2 cloves garlic, minced
1 tsp paprika
1/2 tsp onion powder
1/2 tsp salt
1/4 tsp black pepper
2 tbsp olive oil
2 tbsp chopped green onions (optional for garnish)
Directions:
Preheat Oven:
Preheat your oven to 375°F (190°C). Lightly grease a 9x13-inch baking dish.
Prepare Potatoes:
Toss the cubed potatoes with olive oil, paprika, onion powder, salt, and pepper. Spread them evenly in the baking dish and roast in the oven for 25-30 minutes until they are tender and slightly golden.
Make the Sauce:
In a medium bowl, mix together sour cream, milk, cream cheese, and minced garlic until smooth.
Assemble the Casserole:
Once the potatoes are done roasting, add the cooked chicken and steamed broccoli to the baking dish. Pour the creamy sauce over the top and mix everything together.
Add Cheese:
Sprinkle the shredded cheddar cheese evenly over the casserole.
Bake:
Bake the casserole for 15-20 minutes, or until the cheese is melted and bubbly.
Garnish and Serve:
Remove from the oven and garnish with chopped green onions (optional). Let it cool slightly before serving.
