Ingredients:
1 package (16 ounces) Oreo cookies (about 36 cookies)
2 cups heavy whipping cream, cold
1 package (8 ounces) cream cheese, softened
1 cup powdered sugar
1 teaspoon vanilla extract
½ cup rainbow sprinkles (plus extra for garnish)
1 tablespoon unsweetened cocoa powder (optional, for dusting)
Instructions:
Prepare the Cream Mixture:
In a large mixing bowl, beat the cold heavy whipping cream using an electric mixer until stiff peaks form. Set aside. In another bowl, combine the softened cream cheese, powdered sugar, and vanilla extract. Mix until smooth and creamy. Gently fold the whipped cream into the cream cheese mixture in three parts, ensuring the texture stays light and airy. Stir in the rainbow sprinkles.
Assemble the Layers:
Line the bottom of an 8x8-inch square pan (or a similar-sized dish) with a single layer of Oreo cookies, placing them close together. Spread one-third of the cream mixture evenly over the cookies, smoothing it with a spatula. Repeat this process two more times, creating a total of three layers of cookies and cream.
Chill the Cake:
Cover the assembled cake with plastic wrap and refrigerate for at least 6 hours, or preferably overnight. This allows the cookies to soften and meld with the cream, creating a cake-like texture.
Finish and Serve:
