CHOCOLATE COCONUT FUDGE CAKE
You Will Need (Cake):
1¾ cups all-purpose flour
3/4 cup cocoa powder
1½ tsp baking soda
1 tsp baking powder
1/2 tsp salt
1 cup buttermilk
1/2 cup vegetable oil
2 eggs
1½ cups sugar
1 tsp vanilla extract
3/4 cup hot water
Coconut Cream Filling:
1 cup shredded sweetened coconut
3/4 cup sweetened condensed milk
1/2 cup whipped cream or frosting
Chocolate Ganache:
1/2 cup heavy cream
1/2 cup dark chocolate chips

Instructions:
1. Preheat oven to 350°F (175°C). Grease and line two 8-inch pans.
2. In a bowl, mix flour, cocoa, baking powder, baking soda, and salt.
3. In another bowl, whisk buttermilk, oil, eggs, sugar, and vanilla. Mix dry into wet. Stir in hot water last.
4. Divide into pans and bake for 25–30 mins. Cool completely.
5. For filling, mix coconut, condensed milk, and whipped topping.
6. Layer cakes with the coconut filling in between.
7. For ganache, heat cream, pour over chocolate chips, stir smooth. Pour over cake and let drip. Chill, slice, and serve.
