Crunchy & Satisfying Paleo Friendly Seed Nut Crispbread Delight 🌰😋
Ingredients:
1/2 cup (2.5 oz / 70g) sunflower seeds, raw
1/2 cup (2.5 oz / 70g) pumpkin seeds (pepitas), raw
1/2 cup (2 oz / 55g) almonds or walnuts, roughly chopped
1/4 cup (1.25 oz / 35g) sesame seeds
1/4 cup (1.25 oz / 35g) flax seeds
2 tablespoons chia seeds
1 tablespoon psyllium husk powder
1 teaspoon sea salt
1/2 teaspoon mixed dried herbs (optional)
1 tablespoon maple syrup (optional, for slight sweetness) or leave out for strict paleo/keto
1 1/2 cups (12 fl oz / 350ml) water
Directions:
1. Preheat oven to 325°F (160°C). Line a standard baking sheet with parchment paper.
2. In a large bowl, combine all the dry ingredients: sunflower seeds, pumpkin seeds, chopped almonds/walnuts, sesame seeds, flax seeds, chia seeds, psyllium husk powder, salt, and optional dried herbs. Mix well.
3. In a separate small bowl, whisk together the water and optional maple syrup (if using).
4. Pour the liquid mixture over the dry ingredients and stir until everything is thoroughly combined.
5. Let the mixture sit for about 10-15 minutes to thicken as the seeds and psyllium absorb the water.
6. Pour the thickened mixture onto the prepared baking sheet. Spread it out evenly and thinly using a spatula. Try to get it as uniform as possible, about 1/8 inch (3mm) thick.
7. Bake for 30 minutes. Remove from the oven and carefully score the crispbread into desired shapes (squares, rectangles).
8. Return the baking sheet to the oven and bake for another 25-35 minutes, or until the crispbread is firm, dry to the touch, and lightly golden.
9. Turn off the oven and let the crispbread cool completely inside the oven with the door slightly ajar to ensure maximum crispiness.
10. Once cool, break apart along the score lines. Store in an airtight container.
