β¨ Ingredients (Makes 4 Hot Pockets)
For the Chicken Filling:
1 lb boneless, skinless chicken breast, cut into small chunks
1 tablespoon olive oil
Salt and pepper, to taste
1 teaspoon garlic powder
1 teaspoon Italian seasoning
1/2 cup marinara sauce (plus extra for dipping)
1 cup shredded mozzarella cheese
1/4 cup grated parmesan cheese
For the Pockets:
1 package refrigerated pizza dough (or crescent roll dough)
1 egg (for egg wash)
1/2 cup breadcrumbs (preferably panko for extra crunch)
1/4 cup grated parmesan cheese (for coating)
Fresh basil or parsley (for garnish, optional)

1. Cook the Chicken
Heat olive oil in a skillet over medium heat.
Add diced chicken chunks, season with salt, pepper, garlic powder, and Italian seasoning.
Cook for 5β7 minutes, until the chicken is cooked through and lightly browned.
Stir in marinara sauce and let it simmer for another 2 minutes. Remove from heat and set aside.
2. Prepare the Dough
Preheat your oven to 375Β°F (190Β°C).
Roll out the pizza dough on a floured surface into a rectangle (about 10x12 inches). Cut into 4 equal squares.
3. Assemble the Hot Pockets
Spoon a generous amount of the chicken mixture onto the center of each dough square.
Sprinkle with shredded mozzarella and grated parmesan.
Fold the dough over the filling to form a pocket, pinching the edges together to seal it well.
4. Bread the Pockets
In a small bowl, beat the egg.
Brush the egg wash over the top of each pocket.
Mix breadcrumbs and parmesan cheese in a shallow dish, then coat each hot pocket in the breadcrumb mixture, pressing lightly to make sure they stick.
5. Bake
Place the prepared hot pockets on a greased baking sheet.
Bake for 18β20 minutes, or until the pockets are golden brown and crispy.
