Β½ cup melted butter

ΒΌ cup granulated sugar

For the Cheesecake Filling:

3 (8 oz) packages cream cheese, softened

1 cup granulated sugar

3 large eggs

1 tsp vanilla extract

Β½ cup sour cream

1 tbsp lemon juice

For the Strawberry Swirl:

---

Instructions:

1. Prepare the Crust:
Preheat your oven to 325Β°F (163Β°C). In a bowl, mix the graham cracker crumbs, melted butter, and sugar until well combined. Press the mixture firmly into the bottom of a 9-inch springform pan. Bake for 8 minutes, then set aside to cool.

2. Make the Cheesecake Filling:
In a large mixing bowl, beat the softened cream cheese with sugar until smooth and creamy. Add eggs one at a time, mixing gently after each addition. Stir in vanilla extract, sour cream, and lemon juice until well incorporated. Pour half of the filling over the cooled crust.

3. Prepare the Strawberry Swirl:
In a saucepan, combine the pureed strawberries, sugar, cornstarch, and lemon juice. Cook over medium heat, stirring frequently, until the mixture thickens. Allow it to cool slightly before swirling spoonfuls into the cheesecake batter using a knife or skewer. Pour the remaining cheesecake filling over the top and smooth out the surface.

4. Bake & Chill:
Bake for 50-55 minutes, or until the edges are set while the center remains slightly jiggly. Turn off the oven and leave the cheesecake inside with the door slightly open for about an hour to cool gradually. Once cooled, refrigerate for at least 4 hours or overnight.

5. Add Toppings & Serve:
After chilling, spread the strawberry glaze or preserves over the cheesecake. Arrange sliced strawberries on top and pipe whipped cream around the edges for decoration. Slice and enjoy!
