High-Fiber Apple-Cranberry Baked Oats
Ingredients:
2 cups old-fashioned oats
1 teaspoon baking powder
1 teaspoon ground cinnamon
1/4 teaspoon salt
1 1/2 cups unsweetened almond milk (or milk of choice)
1/2 cup unsweetened applesauce
1/4 cup maple syrup or honey
1 large egg
1 teaspoon vanilla extract
1 medium apple, diced
1/2 cup dried cranberries
1/4 cup chopped walnuts or pecans (optional)
Instructions:
Preheat Oven:
Preheat your oven to 375°F (190°C) and lightly grease an 8x8-inch baking dish.
Combine Dry Ingredients:
In a large bowl, mix together oats, baking powder, cinnamon, and salt.
Mix Wet Ingredients:
In a separate bowl, whisk together almond milk, applesauce, maple syrup, egg, and vanilla extract.
Combine and Add Fruits:
Pour the wet ingredients into the dry ingredients and stir until well combined. Fold in the diced apple, dried cranberries, and nuts, if using.
Bake:
Pour the mixture into the prepared baking dish. Smooth the top with a spatula. Bake for 30-35 minutes, or until the top is golden and the oats are set.
Cool and Serve:
Let cool slightly before slicing. Serve warm on its own or with a drizzle of milk or yogurt.
