CHEESY CAJUN GARLIC CHICKEN ROTINI SKILLET
Ingredients:
2 boneless, skinless chicken breasts, cut into bite-sized chunks
12 oz rotini pasta
2 tbsp olive oil
2 tbsp Cajun seasoning
1 tsp garlic powder
1/2 tsp onion powder
Salt and pepper to taste
4 cloves garlic, minced
1 tbsp butter
1 cup heavy cream
1/2 cup chicken broth
1 cup shredded mozzarella cheese
1/2 cup grated Parmesan cheese
1/2 cup shredded cheddar cheese
Fresh parsley, chopped (for garnish)
Directions:
1. Cook the Pasta: Bring a large pot of salted water to a boil. Cook rotini pasta according to package directions until al dente. Drain and set aside.
2. Cook the Chicken: In a large skillet, heat olive oil over medium-high heat. Toss chicken pieces with Cajun seasoning, garlic powder, onion powder, salt, and pepper.
Add chicken to skillet and cook until browned and fully cooked, about 6–7 minutes. Remove from skillet and set aside.
3. Make the Creamy Sauce:
In the same skillet, melt butter. Add garlic and sauté for 1 minute until fragrant.
Stir in chicken broth and heavy cream, then bring to a simmer.
Add mozzarella, Parmesan, and cheddar cheese. Stir until the sauce is smooth and cheesy.
4. Combine & Simmer: Add cooked rotini and chicken back into the skillet. Toss everything until well-coated in the cheesy Cajun garlic sauce. Let simmer for 2–3 minutes to blend flavors.
5. Serve: Garnish with parsley and serve hot with extra cheese on top if desired!
