WALNUT BANANA CREAM CAKE
Ingredients
For the Cake:
2½ cups all-purpose flour
1 tbsp baking powder
½ tsp baking soda
½ tsp salt
1 tsp cinnamon (optional)
1 cup mashed ripe bananas (about 2 large)
1 cup granulated sugar
½ cup brown sugar
1 cup vegetable oil
½ cup buttermilk
3 eggs
1½ tsp vanilla extract
For the Whipped Cream Filling:
2 cups heavy whipping cream
½ cup powdered sugar
1 tsp vanilla extract
For the Caramel Drip & Garnish:
½ cup store-bought or homemade caramel sauce
2 bananas, sliced
½ cup chopped walnuts
Extra whole walnuts and banana slices for topping

Instructions
1. Make the Cake Layers:
Preheat oven to 350°F (175°C). Grease and line three 8-inch round cake pans.
In a large bowl, whisk flour, baking powder, baking soda, salt, and cinnamon.
In another bowl, mix bananas, sugars, oil, buttermilk, eggs, and vanilla until smooth.
Combine wet and dry ingredients. Mix until just combined.
Divide into pans and bake for 25–30 minutes. Cool completely.
2. Whip the Cream:
Beat heavy cream, powdered sugar, and vanilla until stiff peaks form.
3. Assemble the Cake:
Place the first cake layer, spread whipped cream, top with banana slices and chopped walnuts.
Repeat for second and third layers.
Drizzle caramel over the top and garnish with walnuts and banana slices.
