Ingredients:
For the Steak:
1-2 Beef Steaks (such as flank steak, sirloin, or ribeye)
Salt and Pepper (to taste)
1 tbsp Olive Oil (for cooking)
1 tbsp Butter (optional, for added flavor)
For the Eggs:
2 Eggs (or more, depending on servings)
Salt and Pepper (to taste)
Butter or Oil (for frying the eggs)
For the Potatoes:
2 Medium Potatoes (peeled and diced)
1 tbsp Olive Oil
Salt and Pepper (to taste)
1/2 tsp Paprika (optional, for extra flavor)
1/2 cup Cherry Tomatoes (halved, for garnish)
For the Salad:
Fresh Greens (such as spinach, lettuce, or arugula)
2 tbsp Green Onions (chopped, for garnish)
Instructions:
1. Cook the Steak:
Season the steaks with salt and pepper on both sides.
Heat a skillet over medium-high heat and add the olive oil. Once the pan is hot, place the steaks in the skillet and cook for about 4-6 minutes per side for medium-rare (adjust time for your preferred level of doneness). For extra flavor, add butter in the last minute of cooking and baste the steak.
Remove the steak from the skillet and let it rest for a few minutes before slicing it against the grain.
2. Prepare the Potatoes:
While the steak is cooking, heat another skillet over medium heat with olive oil. Add the diced potatoes and cook, stirring occasionally, for about 10-12 minutes until they are golden and crispy. Season with salt, pepper, and paprika for extra flavor.
In the last minute of cooking, toss in the halved cherry tomatoes and cook for a minute until softened.
3. Fry the Eggs:
In the same skillet, heat a bit of butter or oil over medium heat. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 3-4 minutes. Season with salt and pepper.
4. Assemble the Skillet:
On a plate or serving dish, arrange a bed of fresh greens.
Add the crispy potatoes and cherry tomatoes on top of the greens.
Place the steak slices on one side of the plate.
Top the potatoes with the fried eggs and sprinkle with chopped green onions for garnish.
