Ingredients:
- 1 cup (200g) granulated sugar
- 3/4 cup (95g) all-purpose flour
- 1/2 cup (45g) unsweetened cocoa powder
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 large egg
- 1/2 cup (120ml) whole milk
- 1/4 cup (60ml) vegetable oil
- 1 teaspoon vanilla extract
- 1/2 cup (120ml) hot water

For the cheesecake filling:
- 6 oz (170g) cream cheese, softened
- 3 tablespoons granulated sugar
- 1/2 teaspoon vanilla extract
- 1 egg yolk

Instructions:
1. Preheat your oven to 350°F (175°C) and line a 12-cup muffin pan with cupcake liners.
2. In a large mixing bowl, combine sugar, flour, cocoa powder, baking powder, baking soda, and salt. Add the egg, milk, oil, and vanilla, mixing until smooth. Gradually stir in the hot water until well blended; the batter will be runny.
3. In another bowl, mix the cream cheese, sugar, vanilla extract, and egg yolk until you achieve a smooth, creamy texture.
4. Pour the chocolate batter into each cupcake liner, filling them halfway, then add about 1 tablespoon of cheesecake filling on top. You can swirl it slightly or leave it as is for a soft center.
5. Bake for 18–22 minutes, or until the cupcakes are firm and a toothpick inserted into the chocolate part comes out clean.
6. Allow the cupcakes to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
7. Enjoy them as is, or chill for a firmer cheesecake consistency.
