Strawberry Cheesecake Cookies
Ingredients:
For the Cheesecake Filling:
• 6 oz cream cheese, softened
• 3 tbsp granulated sugar
• ½ tsp vanilla extract
For the Cookie Dough:
• ½ cup unsalted butter, softened
• ⅓ cup granulated sugar
• 3½ tbsp light brown sugar
• 1 large egg
• 1 tsp vanilla extract
• 1½ cups all-purpose flour
• ½ tsp baking soda
• ¼ tsp salt
• ½ cup freeze-dried strawberries, crushed (or strawberry jam/swirl)

Instructions:
1. Make the Cheesecake Filling:
• In a bowl, beat cream cheese, sugar, and vanilla until smooth.
• Scoop into small ½-tsp dollops onto a baking sheet lined with parchment paper and freeze for 30 minutes.
2. Prepare the Cookie Dough:
• Cream butter and both sugars together until fluffy.
• Mix in egg and vanilla.
• Add flour, baking soda, and salt. Mix until combined.
• Fold in crushed freeze-dried strawberries or swirl in strawberry jam.
3. Assemble the Cookies:
• Scoop 1½ tbsp cookie dough and flatten slightly.
• Place a frozen cream cheese ball in the center and wrap the dough around it.
• Seal and roll gently into a ball.
4. Bake:
• Preheat oven to 350°F (175°C).
• Bake cookies on a lined tray for 10–12 minutes until just set.
• Cool slightly before serving.
