BLUE VELVET OREOS CHEESECAKE BARS
Ingredients
Crust Layer:
2 cups Oreo cookie crumbs (about 20 Oreos, with filling)
4 tbsp melted butter
Blue Velvet Cheesecake Filling:
16 oz cream cheese, softened
1 cup powdered sugar
1 tsp vanilla extract
1¼ cup heavy cream (chilled)
A few drops royal blue gel food coloring
½ cup crushed Oreos (for folding in)
Topping Layer:
1½ cups white chocolate chips
½ cup heavy cream
More blue gel coloring (optional)
Whole or halved Oreos for garnish
Extra Oreo crumbs for sprinkle

Instructions
1. Make the Crust:
Mix Oreo crumbs with melted butter until fully combined.
Press into a parchment-lined 8x8” square pan. Freeze for 10 minutes.
2. Make the Cheesecake Filling:
Beat cream cheese until smooth and creamy.
Add powdered sugar and vanilla. Mix well.
In another bowl, whip the heavy cream until stiff peaks form.
Gently fold the whipped cream into the cream cheese mixture.
Add blue food coloring and fold until evenly blue.
Fold in crushed Oreos.
Spread over the chilled crust and smooth the top.
3. Prepare the Topping:
Heat heavy cream until just steaming (not boiling), pour over white chocolate chips.
Let sit for 1 minute, then stir until smooth.
Tint with more blue food coloring if desired.
Pour over cheesecake layer and smooth.
4. Chill:
Refrigerate the entire pan for at least 6 hours or overnight.
5. Garnish:
Before serving, top with whole Oreos and sprinkle with more crushed cookies.
