π Ingredients:
For the Crust:
1Β½ cups graham cracker crumbs
ΒΌ cup granulated sugar
6 tbsp melted butter π§
For the Cheesecake Layer:
16 oz cream cheese, softened
Β½ cup granulated sugar
2 eggs π₯π₯
2 tbsp lemon juice π
1 tsp lemon zest π
1 tsp vanilla extract
1 cup fresh or frozen blueberries π«
π©βπ³ Instructions:
Preheat oven to 325Β°F (160Β°C) π₯. Line an 8x8-inch pan with parchment.
Mix graham crumbs, sugar, and melted π§ butter. Press into pan and bake 8β10 minutes.
Beat cream cheese and sugar until smooth. Add π₯ eggs, π lemon juice, zest, and vanilla. Mix until creamy.
Gently fold in π« blueberries.
Pour over crust and smooth the top.
Bake 30β35 minutes until set but slightly jiggly in the center.
Cool completely, then chill 3+ hours before slicing into bars.
